Gluten Free Batter

Fish and chips is one of my favourite meals and luckily the Low FODMAP Diet isn’t a weight loss diet so its perfectly acceptable to treat yourself. I always use cod loin as its my favourite and I cook it without the skin if I’m using batter. Before I found a great gluten free batter I was happy with I used to cook my cod skin down in foil on the bbq so it became a treat throughout summer. I now enjoy cod all year round with this fab batter recipe. You should use your own trusted methods to cook your cod and chips so I’m only putting the ingredients and method for the batter which can also be used for other battered dishes. If you are battering fish, dust it with the extra gluten free flour first.

  1. Sieve the gluten free flour into a mixing bowl.
  2. Add the baking powder, salt and pepper and give the dry ingredients a good mix.
  3. Add the gluten free beer and give everything a good mix until you have a smooth batter.
  4. Drink the rest of the gluten free beer from the bottle because the Low FODMAP Diet is the all giving diet!
  5. Use the batter as you wish.
