I get fed up of cold lunches even in summer. Sometimes I just want some nice warm comforting food in the middle of the day, especially if I’m not feeling great.
For this reason I always have a few batches of soup in the freezer. This is so handy for busy days in the office or workshop too. It means no matter how busy my day gets, I have a Low FODMAP lunch available to quickly heat up in minutes.

Ingredients
- Garlic infused olive oil
- 1 Leek – Green Parts only
- 1 Carrot – peeled and grated
- 900g Large ripe tomatoes
- 500ml Low FODMAP Vegetable stock (I get mine from here)
- 2 tbsp Worcestershire sauce
- Squeeze of lemon juice
- Dairy Free cream (optional)
Method
- Get all of your ingredients ready. For the tomatoes, deseed and roughly chop.
- Heat the oil in a heavy based pot and add the leeks.
- When the leeks start to soften, add the carrot.
- Keep stirring the ingredients around until they are started to colour then add the tomatoes.
- Cook stirring for around 4 – 5 minutes then add the vegetable stock and bring to the boil.
- Cover and reduce to a simmer for around 15 minutes.
- Remove from the heat to cool slightly then blend to a smooth soup.
- Return to the heat adding the Worcestershire sauce and lemon juice then mason to taste.
- If using the cream then remove from the heat before adding to the soup.
- Serve immediately or cool and freeze in air tight containers or food bags.
Additional Notes
You don’t have to remove the seeds of the tomatoes but they can be quite bitter so I remove them just incase.
To serve my soup, I added some homemade Low FODMAP Croutons and a sprinkle of permesan. To make the croutons, cube some left over gluten free bread and gently fry in garlic infused olive oil. Drain the croutons on kitchen paper before serving.
