Before ‘going Low FODMAP’, I used to make a beautiful Italian stew packed with garlic, onions, celery, beans and lots of other High FODMAP Ingredients. No wonder I suffered so badly! Anyway, I do miss that particular stew so I decided to make a Low FODMAP version which is equally as tasty but without the nasty symptoms.
We can thank the lovely #jamieoliver for this one as he was the originator of this recipe from the beautiful book ‘Cook with Jamie’. I wonder if I could convince him to collaborate on a Low FODMAP recipe?! Ok, back to reality Samantha!
Oh…you want to know what the surprise is! Actually I have no idea! I called it that once and it stuck. Family heritage at its finest.

Ingredients
- Garlic infused olive oil
- 1 Leek – Green Parts only
- 2 large carrots – peeled and chopped
- 1 red pepper – deseeded and chopped
- 1 courgette – chopped
- 1 pack of Gluten Free Sausages*
- 200ml white wine (not chardonnay)
- 500ml litre Chicken Stock
- 400g tin Chopped tomatoes
- 1 tbsp tomato puree
- 1 tbsp Thyme leaves
- 1 tbsp Rosemary – leaves picked and chopped
- 1 tsp asafoetida
- 1 tbsp Worcestershire sauce
- 1 tsp cornflower (in 1 tsp water) (optional)
- Salt and Pepper
Method
- Get all of your ingredients ready.
- Heat a good splash of oil in a heavy based pot and add the leeks, carrots, pepper and courgette. Stir around pot until starting to soften.
- Add the asafoetida and continue stirring for one minute.
- Remove the ingredients from the pan and put to one side.
- Add another splash of oil to the pan and brown the sausages.
- Once the sausages are browned add the vegetables back in and give it all a good mix.
- Add the wine and simmer it down.
- Add the tomatoes, tomato puree, stock, rosemary and thyme.
- Bring to the boil and then simmer gently for 30 minutes.
- Now is the time to add the cornflour if you like a thick sauce.
- Add the Worcestershire sauce and season with salt and pepper to taste.
- Simmer for a further few minutes and serve when ready.

*Gluten Free Sausages may contain onion or garlic powder so check the label before buying.
I served my sausage surprise with dairy free mash and Low FODMAP Vegetables.
