Carrot and Corriander Soup

This recipe will make approximately 4 bowls of soup.

1 tbsp Garlic Infused Olive Oil
1 Leek (Green part only)
5 carrots
1 Large Potato
1 litre Chicken Stock (must be low fodmap)
Bunch of Corriander
Paprika
Salt
Pepper
Oatly Cream (optional)

A note about ingredients:

You must ensure that all of your ingredients are lowfodmap and the only tricky ingredient here is chicken stock.  I use Massels stock cubes which I buy in bulk from Amazon because they are quick and convenient.  You can make your own chicken stock without onion and garlic but I can never make enough for all the recipes I produce requiring stock.

Method:

1. Chop and wash the leek, potato and carrots in preparation for cooking. Remember to only use the green part of the leek for this recipe.  (I actually give the white part to neighbours and they save the green parts they dont use for me).  Give the leek a thorough wash as it can be difficult to remove the dirt and grit.

2. Heat the oil on a medium heat in a heavy based pan and add the leek.  Stir it around until it starts to turn soft then add the carrots.  Continue stirring for around three minutes and add the potato, chicken stock and corriander.  Turn up the heat until its boiling then reduce the heat to a simmer.

3. Sprinkle in some paprika, around a teaspoon or two depending on your taste.  Give everything a good stir making sure nothing is stuck to the bottom and allow the soup to simmer until all the vegatables are soft.

4. Remove from the heat and allow to cool slightly.  This is so the liquid isn’t too hot when blending incase it splashes onto you.  Blend the soup until all the vegatables are liquidised.  (I use a stick blender, its much easier for soup).

5. Season with the salt and pepper to your own taste and serve in a warmed bowl.  If you want to add oatly cream, add it now.  Have fun and get creative with your pouring!  I like to add croutons to my soup made with Low Fodmap ciabata or even just the ciabata to tear up and dung in.

N.B. I put the remainder of the soup into small sealable bags and freeze them.  The smallest food bags from ikea are perfect for single portion sizes.  Write the contents and date on each bag, expect to have lots of flavours in your freezer so you don’t want to get them mixed up!
